  • 1 cup all-natural smooth almond butter
  • ¼cup raw honey
  • ¾cup dry old-fashioned rolled oats
  • 1 scoop Café Latte Shakeology

HEALTHY ESPRESSO CHOCOLATE CHIP COOKIES

INGREDIENTS

  • ½ cup coconut oil (melted)
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 4 tablespoons coconut sugar
  • 2 tablespoon Silk Coffee Creamer
  • 1 and ½ cups oat flour (regular oats blended)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground espresso
  • ½ cup mini chocolate chips
  • Pinch of salt

INSTRUCTIONS

  1. Melt the coconut oil.
  2. Add in vanilla, egg, Silk Coffee Creamer and sugar. Whisk together until smooth.
  3. Add in oat flour, baking soda, baking powder, espresso and chocolate chips
  4. Chill the dough for at least 1 hour. (Necessary!)
  5. Roll the cookies in 1 inch balls and flatten.
  6. Bake at 350 for 7-10 minutes
